Zusammenfassung: | A process and equipment for stabilizing a foodstuff through irradiation with microwaves are described. The treatment is applied at a pressure below atmospheric pressure, determined on the basis of the temperature at which it is desired to perform the stabilization, based on the equilibrium ratio for saturated vapour in the liquid component of the foodstuff. In this way the temperature can be controlled extremely accurately throughout the treatment time. |
