Zusammenfassung:An apparatus for processing bivalves, such as mussels, comprises a container (1) having an open top closed by a lid (11). The lid (11) includes a circular plate (16) which is biassed down into the open top of the container by springs (12) to place the mussels in the container under pressure while they are cooked. Means are provided for adjustng the pressure applied by the springs (12) to the plate (16).
