Independent claims are included for: (1) a process for obtaining the dairy ingredient comprising subjecting a pasteurized milk cream to at least two physical treatment such as centrifugation, ultra filtration and an ultrafiltration/diafiltration step; and (2) a food composition or food additive composition, comprising the dairy ingredient.
