Zusammenfassung: | A method of making a liquid potato product comprises the steps of (a) providing an initial potato feed 12 comprising a potato component having an initial moisture content, (b) at least partially gelatinizing the potato feed 20 to form a gelatinous potato feed having a second moisture content which is at least 50% of the initial moisture content, and (c) shearing at least a portion of the gelatinous potato feed 24 in the presence of an oil to form the liquid potato product. The gelatinising step may comprise blanching the potato feed. The liquid potato product may have defined rheological and/or shear profiles. A liquid potato product having defined rheological properties, a food product made from the liquid potato product, and a method of making a liquid potato product having defined rheological properties are also claimed. |
