Zusammenfassung: | A vegetable and/or fruit containing snack food comprises a sheet from 1 to 8mm thick comprising a rigid starch matrix comprising potato starch, and a plurality of individual pieces of vegetable and/or fruit randomly distributed throughout the matrix. At least 50% by number of pieces have a minimum dimension of at least 0.75mm and a maximum dimension of up to 7mm. The matrix defines a first cellular structure 60 and the pieces define a second cellular structure 64. At least some of the second cellular structure 64 are defined by polysaccharide cell walls (68, figure 4) of the respective vegetable and/or fruit. The first cellular structure 60 has a larger number-average pore size and a wider distribution that the second cellular structure 64. Also disclosed is a method of manufacturing a vegetable and/or fruit containing snack comprising mixing mashed potato with a plurality of non-potato vegetable and/or fruit ingredients, forming to a sheet, microwaving, cooking in a hot air convection oven, and dehydrating. |
