Zusammenfassung: | The composition consists essentially of hop aroma and flavour components and comprises at least 10% by weight of free fatty acid substances derived from hops. It is produced by admixing a hop extract with either excess alkali or a lipase and then removing any aqueous phase.The starting extract, obtained by extraction with organic solvent or super critical CO2, may have alpha, isoalpha and beta hop acids removed. Heat, high shear or a co-solvent may be used to improve mixing of the lipidic organic phase with the alkali. The solubilised extract imparts an enhanced hop aroma and flavour upon addition to the wort between boiling and the beginning of fermentation. A beer incorporating the extract has a stronger hop aroma and flavour than beer incorporating the usual unsolubilised extract. |
