Spray evaporators. - Milk and other easily decomposable liquids containing albumen are evaporated to dryness by causing a jet of heated compressed air or gas to converge upon a jet of the liquid. The jet of air may be made to induce the jet of liquid, the apparatus then resembling the form of spray-producer used for spraying plants. The air may have a temperature of 250-500‹ C. and a pressure of 1À5-3 atmospheres. A supplementary supply of air may be admitted to the drying-chamber to complete the drying operation.
