A shortening composition which is fluid at low temperatures comprises (by weight) Vegetable liquid triglyceride 80-90% Solid -triglyceride 0À5-4% Propylene glycol mono- or difatty acid esters 8-16% Lecithin 0.1-2% Glyceryl or sorbitan mono- or di-fatty acid esters 0-3% Polyoxyethylene sorbitan fatty acid esters 0-5 % Cane sugar fatty acid esters 0-5% Lactylated glyceryl mono- and/ or di-fatty acid esters 0-5% The liquid triglyceride may be soybean, cottonseed, rapeseed, corn or kapok oil; the solid triglyceride may be a hydrogenated soybean, cottonseed, rapeseed, corn or animal oil or fat. The fatty acid in the various esters may be tetradecanoic, hexadecanoic, stearic, licosanoic, docosanoic, oleic, elaidic, linoleic, linolenic, eleostearic or arachidonic acid.
