Zusammenfassung:	The invention relates to a method for defrosting frozen food products initially present in the form of individually frozen products (IQF) or in the form of at least one block of food products agglomerated inside the enclosure of a mixer (11), said method comprising the steps of: injecting water vapour into the enclosure so as to cause, if necessary, the dissociation of the food products of the at least one block and/or to soften the surface of the blocks or IQF products, the total quantity of vapour injected being lower than or equal to 10% of the total weight of the products to be defrosted; and subjecting the food products to a vacuum evaporation process.
