Zusammenfassung: | alpha -Glucosidase and/or pullulanase obtained by culturing a strain of Thermococcus hydrothermalis are new. The strain is preferably Thermococcus hydrothermalis CNCM I 1319 (deposited at the Collection Nationale des Cultures de Microorganisms on 16.06.1993). The T. hydrothermalis CNCM I 1319 produces (a) alpha -glucosidase which (i) has a maximum activity at a pH 5.0-5.6 at 96-116 deg C on a substrate of starch and (ii) has an maximum activity at 110 deg C at a pH5.5 on a starch substrate and (b) pullulanase which (i) has a maximum activity at a pH 5.0-6.2 at 85-115 deg C on a starch or pullulan substrate and (ii) has a maximum activity at 110 deg C at a pH 5.5 on a substrate of pullulan or starch.
