Zusammenfassung:The invention provides a method for preserving food, which comprises adding at least one compound selected from among protamine, chitosan and lysozyme to food and keeping the food in a substantially hermetically sealed state in the presence of a deoxidizer. This method makes it possible to prevent denaturation of food by, e.g., yeast, which has been difficult with the aid of a naturally occurring antibacterial substance.
