Zusammenfassung:The present invention relates to a method for manufacturing a spreadable solid fat obtained from a highly concentrated emulsion, wherein the obtained fat consists of an emulsion where the aqueous phase includes HPMC hydrocolloids, sodium alginate and κ-carrageenan dissolved in water, an oil fraction consisting of a vegetable oil with a lipid profile of high nutritional quality, and flavourings, wherein the oil fraction represents a volume greater than 74% of the total volume of the emulsion. Another object of the invention is the obtained product, as well as its use as a spreadable food product for ingesting same, making use of vegetable oils with a lipid profile of high nutritional quality that is a substitute for margarines and butters.
