Sistema y procedimiento de obtención, clasificación y selección de aceite de oliva. Comprende las etapas de selección de un molino (1); prensado de la oliva en dicho molino (1), obteniéndose pasta prensada; batido de la pasta prensada; separación en alperujo y una mezcla de aceite y agua; extracción de las partículas sólidas de la mezcla de aceite y agua; decantado, filtrado, almacenamiento en una bodega y cata. El control de las etapas se realiza por medio de etiquetas RFID de producto (7), que acompañan al producto durante todo el procedimiento, en las que se registra información referente a los parámetros medidos por unos sensores en cada una de las etapas. En función de la información registrada en las etiquetas RFID de producto (7), se controla en tiempo real el procedimiento de obtención, actuando sobre los flujos de producto mediante electroválvulas (8) controladas por sistemas inteligentes y corrigiendo los parámetros de los elementos anómalos. |
