Both the liquid and dense fractions are frozen for subsequent use. The invention relates to a method of processing crustacea consisting in: capturing the krill draining the water from the krill using the most suitable means, the drained-off water being approximately equivalent to 5 % of the weight of the krill to be processed (or using defrosted krill at a temperature of between -2 and 8 DEG C) separating the liquid into two fractions, liquid and solid, in a pre-determined time and subsequently removing suspension substances from the liquid fraction. The two fractions can be frozen for later use.
