Zusammenfassung: | Said enriched sausages comprise antioxidant vitamins, such as vitamin C, E and provitamin A. They are characterized in that the sausage is enriched with provitamin A, vitamin C and vitamin E in amounts such that the sausages are given nutritional properties beneficial to health. The provitamin A enrichment is achieved by means of an increase in the beta-carotene content. Said increase is achieved by means of the selection of ingredients rich in beta-carotenes. Preferably, the ingredient used for the enrichment of the provitamin A content of said sausages is paprika (pepper) selected with a rich content of beta-carotenes and other carotenoids with provitamin A properties. In particular, the sausages are "sobrasadas" with a provitamin A content in excess of 50%.
