Zusammenfassung:The present invention relates to a process for preparing a particulate β-glucan composition with a purity of more than 70% (w/w). The process comprises the step of incubating a disintegrated a cell wall fraction of a yeast hydrolysate or autolysate at high temperatures under alkaline conditions. The invention also provides a particulate β-glucan composition obtainable by the method of the invention. More specifically, the invention provides a particulate β-glucan composition having a purity of more than 70% (w/w) in which at least 90% of the particles in the composition have a size of less than 35 µm. Finally, the invention relates to the use of a particulate β-glucan composition of the invention as a food or feed additive.
