METHOD OF MAKING CHEESE

Described is a method of making cheese from a high-solids cheese milk. The method comprises acidifying and renneting cheese milk, resulting in a coagulum that is cut so as to provide curd particles. According to the invention an amount of water is added prior to cutting the coagulum.
