Zusammenfassung:	The present invention relates to a composition comprising at least one continuous fatty phase, at least one aqueous phase at a concentration of at least 50.0% by weight, relative to the total weight of the composition, and dispersed in said fatty phase, at least one polyglycerol ester of at least one poly(hydroxystearic acid) and carboxylic acids, at least one ester of polyglycerol comprising from 4 to 15 glycerol units and of at least one linear or branched, saturated or unsaturated fatty acid comprising from 6 to 24 carbon atoms, and glyceryl trihydroxystearate, the polyglycerol ester of at least one poly(hydroxystearic acid) and carboxylic acids/polyglycerol ester of at least one fatty acid weight ratio being strictly greater than 0.7.
