Zusammenfassung:	Barrier coating compositions, wash compositions, and other compositions for perishables and methods, systems, kits, and coated perishables relating thereto are provided. Fresh fruits and vegetables, in particular, can benefit from the teachings of the present disclosure. Preferred barrier coating compositions include an active hydrogen component that preferably includes one or more of a lipid, a polysaccharide, a polypeptide, or a combination thereof. In addition to providing active hydrogen groups, the active hydrogen component preferably functions as a binder and/or barrier component. The barrier coating compositions may include one or more materials to facilitate crosslinking of the resulting coating.
