The method involves: * A phase of heating the crushed organic material in a compression chamber, at a pressure P1 in order to reach a critical temperature TC of between Tdegradation and Tdenaturation * A phase of keeping the temperature at the critical temperature TC for a time period shorter than sixty minutes, * A cooling phase under stress, at a pressure P2.
