A sous vide cooker (100) comprising:a housing (102) extending along a longitudinal axis (112) from an upper housing end (404) to a lower housing end (406) and comprising at least one display;a bulkhead (410) secured at the lower housing end (406) and extending along the longitudinal axis (112) from an upper bulkhead end (412) to a lower bulkhead end (414), the bulkhead (410) and housing (102) forming a first cavity (500) therebetween;a skirt (106) extending along the longitudinal axis (112) from an upper skirt end (422) to a lower skirt end (424) located below the lower bulkhead end (414) to form a second cavity (506) between the skirt (106) and the bulkhead (410), the skirt (106) having one or more inlet openings (108) and one or more outlet openings (108) located below the lower bulkhead end (414);an impeller (204) located in the second cavity (506);a motor (428) operatively connected to the impeller (204);a heating element (202) located within the second cavity (506);a metal heat sink (416) located in the first cavity (500); anda TRIAC (438) physically attached in conductive thermal communication to the heat sink (416) in the first cavity (500).
