Zusammenfassung:An oil and fat composition for a filling or sauce, optionally containing an emulsifier, and having the following features: (1) a solid fat content ≥ 8% at 10°C; (2) a solid fat content ≥ 2% at 20°C; and (3) a solid fat content ≥ 2% under isothermal crystallization for 4 minutes at 10°C. The oil and fat composition of the present disclosure has low saturation, and the sauce made from the composition has good stability and oil separation is difficult to occur at a high temperature. The present invention can be used in baked goods such as breads, cookies, and cakes.
