Zusammenfassung:The invention relates to a device (10) for portioning and kneading dough, in particular a dough drum or portioning drum, which can be rotated or pivoted incrementally by a drive and comprises a housing (2), - wherein the device (10) includes at least one interchangeable strip (1) which can be detachably attached to or slid into the housing (2), - the interchangeable strip (1) comprises a number of receiving chambers (5) for the dough portions to be portioned, - in at least one of the receiving chambers (5), in particular in each of the receiving chambers (5), a weighing pad (3) is linearly guided and arranged in the receiving chamber (5) so as to be displaceable by means of an adjusting device (6), - the weighing pads (3) are arranged in the interchangeable strip (1) in such a way that, when the weighing pads (3) are displaced, dough can be introduced into the receiving chamber (5), said adjusting device (6) comprising a portioning strip (4) which is adjustably arranged in the device (10), and - the portioning strip (4) is configured in such a way that when the interchangeable strip (1) is inserted, the weighing pads (3) can be moved towards, in particular seated against, the portioning strip (4), or can be impinged upon by said portioning strip in a force-transmitting manner, such that, when the portioning strip (4) is adjusted, the weighing pads (3) are adjusted in the receiving chamber (5) in a defined manner .
