Zusammenfassung:	The present invention relates to a colouring composition to be used in the manufacture of food and pharmaceutical products.It regards a water-dispersible composition comprising at least one hydrophilic, water-insoluble solid pigment and at least 5 wt% of at least one starch octenyl succinate derivative as a hydrocolloid.The hydrophilic, water-insoluble solid pigment is preferably selected from the group consisting of hydrophilic carotenoids, metal chelates of carminic acid, curcumin, and chlorophyllin.
