Zusammenfassung:The invention relates to an improved method for coating a cheese, wherein a coating composition comprising lactic acid polymer, is applied to a surface of the cheese, wherein the coating composition (i) does not comprise an addedsource of lactic acid bacteriaand (ii) comprises free carboxylic acidand/or free carboxylate groups. The invention also relates to the corresponding coating composition, use thereof for coating cheese and the coated cheeses. It was found that the cheesecoating compositions according to the invention are an excellent renewable and environmentally friendly alternative to petrochemical-based coatings such as polyvinyl acetate coatings.
