Zusammenfassung:	The apparatus (1) has a constructional unit (7) comprising a housing (11) sealed in a pressure-maintaining manner such that an excess pressure compared to the surroundings of the housing is generatable and monitorable in the housing by a pressure monitoring device (15) at predefinable time intervals. The constructional unit is a drive unit for a cutting device (6) of the apparatus. The pressure monitoring device assesses the pressure ratios in the constructional unit based on predefinable parameters. A pump (14) generates the excess pressure in the constructional unit. An independent claim is also included for a method for operating an apparatus for processing and/or transporting food products.
