Use of a sugar fatty acid ester as a fungicide in the surface treatment of cheese
The present invention relates to an aqueous composition comprising a sugar fatty acid ester and an emulsion polymer for coating a foodstuff for preventing or reducing growth of fungi on the surface of the foodstuff, especially cheese. Preferably the sugar fatty acid ester is sucrose monopalmitate.
