Zusammenfassung:The device (1) has a condensation chamber (5) arranged after a separation chamber (4) and connected to the separation chamber in such a way that aerosol remaining in the separation chamber after partial or complete removal of an ethanol gas phase that is supplied into the condensation chamber. A condensation unit (52) fully or partly condenses the supplied aerosol and the condensate having ethanol content of less than or equal to 15 weight percentage based on total weight of the condensate to be removed from the condensation chamber through a liquid outlet (51). Independent claims are also included for the following: (1) a process for reducing ethanol content in a flavoring substance preparation (2) a process for sensory assessment of one or more flavoring substances.
