Independent claims are included for: (1) a composition, useful for the above process, comprising a zeolite, metal ions and an adhesive compound allowing to adhere the zeolite on the eggshells; and (2) an assembly for the process comprising a device for convoying the eggs and for homogeneous application of the composition on the eggs. L'invention concerne un procédé de conservation des oeufs caractérisé en ce qu'il comprend au moins une étape consistant à déposer de manière essentiellement homogène une composition contenant au moins une zéolithe et des ions métalliques sur au moins l'essentiel de la coquille desdits oeufs.
