Zusammenfassung:	The present invention relates to a composition and a method for the determination of furfurals, in particular the chemical signal substances 5-(hydroxymethyl)furan-2-carbaldehyde (hydroxymethylfurfural, HMF) and furan-2-carbaldehyde (furfural). The determination according to the invention is based on a liquid- or dry-chemical test using barbituric acid derivatives and 4-aminophenazone derivatives.
