Zusammenfassung:Shell eggs are treated using cryogenic carbon dioxide gas to improve egg quality, extend shelf life, and/or reduce microbial numbers in the egg contents. The methods are suitable for use with checked eggs and with eggs obtained from hens that are post-peak production. Preferably, the treated shell eggs are also stored in a gaseous carbon dioxide under refrigerated conditions. Also provided are shell eggs treated according to the foregoing methods.
