Zusammenfassung:	In an arrangement for the industrial peeling of potatoes, comprising a holding member for a potato, an element for pushing the potato into the holding member and cutting members for stripping the potato of its skin in a number of processing stations, the holding member comprises a carrier plate (1) with at least two holder blades (2) arranged in distributed fashion in the carrier plate (1), the holder blade (2) surface being situated substantially perpendicularly to the surface of the carrier plate (1); in at least one of the processing stations a liquid spray or liquid vaporizer being installed by which the potato or component parts respectively, of the processing station can be moistened.
