Zusammenfassung:	In the continuous separation of a feed stream of soured milk into a curd stream and a whey stream with the aid of a separating device (14,114), the dry matter content of the feed stream is continuously measured and an extender for adjusting the dry matter content in the curd stream is continuously adjusted, taking into account the measured value representing the dry matter content in the feed stream, with a view to maintaining constancy of the dry matter content in the curd stream; in this case, to determine the dry matter content of the feed stream independently of the air and gas content, in addition to microwave transmission measurement, a density measurement is additionally carried out.
