Pour protéger une matière grasse sensible à l'oxydation ou un produit alimentaire ou cosmétique contenant une matière grasse sensible à l'oxydation on utilise un mélange de tocophérol, d'acide ascorbique et de lécithine. Un tel mélange est particulièrement efficace pour protéger les huiles riches en acides gras polyinsaturés.
