Zusammenfassung:	A hydraulic splitter (20) is provided for cutting proofed dough pieces carried on a conveyor (25) to form a chevron shaped pattern on the dough pieces. A manifold (120) having multiple nozzles (122) is movable along a guide rail (70) by a timing belt (90) driven by a stepping motor (110). The stepping motor (110) is controlled by a compterized system (150) in conjunction with a pan velocity sensor (200) and a pan position sensor (202) for initiating a cycle of operation and controlling movement of the manifold (120) transversely of the conveyor (25). One of a plurality of stored programs is selected for controlling the shape of the pattern formed on the dough piece.
