Zusammenfassung: | A process for prodn. of a protein hydrolysate from animal milk which is practically free from allergens of protein origin, comprises (i) subjecting a milk serum prod. to enzymatic hydrolysis; (ii) thermally treating the enzymatic hydrolysate in aq. soln. at 80-100 deg.C and pH 6-8 for 3-10 mins, (iii) cooling the hydrolysate to 40-60 deg.C and subjecting it to a second hydrolysis with a proteolytic enzyme to hydrolyse the minor proteins remaining intact after the first hydrolysis and (iv) thermally inactivating the enzyme. |
