Zusammenfassung: | Previously unknown cyclodextrin glycosyl transferases (CGTases) can be prepared by the anaerobic culture of thermoanaerobacter or thermoanaerobium strains. They are more thermostable than known cgTases and have a temperature optimum at approx. 95 degree C. The previously unknown CGTases can be used for liquefying starch at pH 4.5 and temperatures greater than 100 degree C in the preparation of glucose or ethanol. They can furthermore be used for converting liquefied starch into cyclodextrin at a temperature of 80-90 degree C. |
