A lecithin hydrolysate in which the resulting lysolecithin contains substantially all the unsaturated acid residues present in the parent lecithin and substantially none of the saturated fatty acid residues of the parent lecithin and substantially no saturated fatty acid esters is prepared by treating an alcoholic solution of the lecithin with a weak base at a temperature from 10 C. to the boiling point of the solution in the absence of light, moisture and molecular oxygen for a time sufficient to achieve hydrolysis, neutralizing the mixture and removing the resulting fatty acid esters by dialysis or by extraction with cold acetone. The preferred lecithin is that obtained from soya bean and the preferred base is magnesium oxide or calcium oxide. |
