Zusammenfassung:	In a vacuum cooling apparatus, a hollow receptacle (10) is provided, for containing a plurality of containers (14) for containing materials to be cooled, the containers being slidably fitted in the receptacle one after another. The receptacle has apertures (22,24,26,28,30) formed therein arranged at intervals in the axial direction of the receptacle corresponding to the dimension of the container measured in the axial direction of the receptacle. Each of the containers has an aperture (16) formed therein for communication with the receptacle apertures. Seal members (18,20) also are provided, allowing the inside of each container to communicate with the outside only through the receptacle apertures and container apertures. A depressing unit (56) inserts the containers into the receptacle from one end, and vacuum source units (40,42,44,46), coupled to some of the receptacle apertures (22,24,26,28), provide progressive stages of evacuation to cool food within the containers.
