Device for removing the bones from fish fillets (22) having means for holding the fillets and for cutting off the ventral inner skin growing round the ventral bones, the means for holding the individual fillets (22) being composed of a table (30) with suction elements (36) for fixing the fillets (22) on the reference surface (32) of the table (30) which can be displaced with respect to a cutting tool (44).
