Zusammenfassung: | The invention relates to a process for treating and reusing the vapour taken off from baking ovens, in which vapours are continuously taken off from the baking space, upstream and downstream of the steaming zone. The aim of the invention is to improve the energy efficiency of baking ovens by reuse of the secondary energy contained in the vapour and to increase the service life of the components of the baking ovens coming into contact with the steaming atmosphere. According to the invention, this is achieved by the vapour taken off being purified from corrosive constituents by a filter and being fed to a heated heat exchanger, in which, in the vapour flow channel, water is injected and evaporated in an amount such that the resulting steam/air mixture has a moisture content corresponding to that required in the steaming zone and that this steam/air mixture is blown into the steaming zone instead of steam. |
