Zusammenfassung:Apparatuses for the thermal treatment of meat products include boiling vats, roasting ovens, microwave ovens and similar devices. The energy expenditure and cooking losses are very high. The invention is based on the electrical conductivity of such foods. The material which is to be thermally treated, in the present case raw meat material, is connected as a resistor between two poles, to which an electrical potential is applied. According to the invention, for example in the pre-cooking of the raw material for the production of boiling sausage, cooking may be carried out discontinuously in insulated simmering pans or continuously, for example skinless boiling sausage products, in canisters. In this case, the canisters filled with sausagemeat for boiling are moved through on an endless conveyor between live rails. The canisters are provided with electrical contact elements on both sides. For safety reasons, the live rails are covered by a protective tunnel.
