Zusammenfassung:Described is a method of manufacturing dried food and plant products comprising the steps of 1) charging products to be treated into a rotatable basket placed in an autoclave which can be pressurized/depressurized, 2) contacting the products with an aqueous solution of saccharides, if necessary, by spraying them therewith by application of pressurized steam, 3) rapidly reducing the pressure after the contact with the saccharide solution ceases, 4) repeating steps 2) and 3), if necessary, 5) contacting with oil under reduced pressure, and 6) after the contact with oil is stopped, rapidly rotating the basket under reduced pressure to remove water and oil.
