Zusammenfassung:	A machine removes skin and rind from meat and fish as it is rotated by a rolling drum (1) against a blade (14). The machine has automatic incision control, an overhead blade support assembly (3), a blade holder (11) and a control touch-beam (17). The overhead blade support assembly (3) rotates with respect to the machine housing, raising and allowing the knife blade holder (11) to tip. During the skinning and rind removal process, the separated skin or rind exerts pressure on the touch-beam (17) which is transferred to the knife blade (14), reinforcing the blade pressure on the meat.
