Zusammenfassung:The invention relates to a method for the preparation of cheeses and to a device implementing this method. The invention is characterized by the insertion of curdled milk under pressure into a casing 3, possibly perforated, in order to carry out the moulding and the draining, followed by the cutting up of the casing filled with curdled milk into slices, the diameter of the casing and the thickness of the slices corresponding to the individual cheeses to be ripened. It allows the industrial manufacture of cheeses by eliminating or greatly reducing the costs related to the traditional use of moulds. The device comprises a forcing tube 1, fed with curdled milk by a pump 2. A ring 6 controls the partial sealing of and the braking of the casing. Alternatively, a first ring 10 controls the braking of the casing and a second ring 6 allows the controlled expulsion of the whey. The expulsion of the whey can be through perforations 7 in the forcing tube and a pipe 8 connecting the perforations to a vacuum collecting chamber 9.
