Zusammenfassung: | The invention concerns a coffee-making process in which hot water is passed through the ground coffee (47). In order inter alia to increase the intensity of the aroma and improve the taste of the coffee, steam acts on the ground coffee (47) before at least the majority of the hot water is passed therethrough. The invention also concerns a coffee-making machine which comprises an instantaneous water heater (7), a water reservoir (1) which can be connected to the latter via a non-return valve (6), a coffee filter (10) for accommodating the ground coffee (47) and a collection vessel (11) for receiving the coffee. A controllable outlet valve (4, 5) is disposed between the water reservoir (1) and the instantaneous water heater (7). In a first setting, the outlet valve (4, 5) has a small passage cross-section (2) which is so small that the amount of water emerging evaporates completely in the instantaneous water heater (7). In a second setting the outlet valve (4, 5) has a large passage cross-section (3) which is at least large enough for the amount of water emerging to be heated in the instantaneous water heater (7) and conveyed without generating notable amounts of steam. |
