Zusammenfassung:Enzymatically catalyzed esterification of a fatty acid component with at least a hydroxyl group-containing organic component comprises performing the esterification reaction in a solvent-free emulsion of the water-insoluble fatty acid component and at least one alcoholic hydroxyl group containing organic component in water in the presence of the native A-form of the lipase by Candida antarcticaand using the enzyme-containing aqueous reaction mixture optionally in a subsequent esterification reaction as reaction medium.
