Zusammenfassung:	The blanching and cooling all-in-one machine structure comprises a blanching line, a cooling line and a conveying mechanism used for conveying materials in the blanching line into the cooling line, the blanching line comprises a blanching groove, a steam heating assembly is arranged at the bottom of the inner wall of the blanching groove, a heat preservation assembly is arranged at an opening of the blanching groove, and the heat preservation assembly is connected with the cooling line. A filtering assembly is further arranged on the side wall of the blanching tank; by the adoption of the technical scheme, the formed egg sausages fall into the blanching groove, water in the blanching groove is boiled under the action of the steam heating assembly and used for cooking the egg sausages, the heat preservation assembly can keep and slow down heat loss in the blanching groove, the cooked egg sausages are conveyed by the conveying mechanism to enter the cooling line to be cooled, and therefore the egg sausages are
