Zusammenfassung:	The present invention relates to the process of extracting capsicine crystal from chili. Through organic solvent extraction of chili powder, concentration of the extracted liquid, alkali treatment with the deactivating agent comprising mixed gamma-Al2O3 and ZnO, treatment with the separating agent comprising CaCl2, NaCl, Na2SO3 and citric acid and crystallization of the concentrated liquid in the crystallizing tank, capsicine crystal with total alkaloid content over 99 % is prepared. The said process has most technological steps completed in room temperature except the compression concentration to recover solvent, has fast phase separation, simple technological process, easy operation, short production period and simple apparatus, and is suitable for industrial production.
