The preparation method of the panax notoginseng stigma fermentation liquor comprises the following steps: mixing panax notoginseng stigma with a solvent according to a solid-liquid ratio of 1: (4-8) g/mL, extracting for 20-40 minutes, repeatedly extracting for 1-3 times, collecting filtrate, and concentrating to obtain crude extract; enriching ginsenoside in the crude extract through column chromatography to obtain an enriched solution; and inoculating strain fermentation liquor into the enrichment liquid according to the inoculum size of 8-12%, and fermenting.
